I mostly write academic papers with latex. However, what I have to do with software documentation in my research, so I actually work with some of these concerns.
The best thing about latex is that you are concerned with the content and structure, not just the visual layout. It's like writing HTML with CSS instead of pure HTML.
Here are some reasons that I think latex is useful to make some documents:
One reason is that dealing with many styles is more structured and the styles are "visual" For example, if you are typing in the word, then every time you want to mention the class or the object, you change a style. In Latex, as I write, I write something like this:
bla bla bla ~ \ methodName {foo} bla bla ~ \ className {FooBar}
I think for a long document, it's useful I can easily find the names of my class, change them, etc.
The second advantage is that I can use macros for institutions. For example, suppose I have some modules that handle some functionality, but its name can change later or I'm not sure what it is. I can have a macro called \ ModuleForXXX, and when I finally choose a name or change it.
A third and perhaps most important advantage is that it is easier to create a document than a hierarchy of files in latex compared to the Word document.
